Roast winter vegetable frittata

Ingredients

Selection of winter veg (enough for the whole party, quite a lot needed)

Potato
Sweet potato
Squash
Onions
Beetroot
Leeks
Carrot
Peppers
Garlic
etc

Optional extras

Mushrooms
Courgette

Eggs – approx 2 eggs per person

Method

MAKE SURE ALL THE DISHES FIT IN THE AVAILABLE OVEN

Oil the dishes

Chop and lay veg. in several large baking trays or quite shallow dishes

Drizzle with oil

Season with salt. pepper, herbs/spices suitable for the veg used.

Roast in oven until soft – toss occasionally to ensure all are coated with oil and cooked (can speed cooking process by using microwave if dishes are suitable or don’t all fit in oven)

Beat eggs with a little milk (approx 2 eggs per person)

Pour egg mix over the veg.

Return to oven

Cook until eggs done and starting to brown slightly.

Serve with salad – a selection is best (green/ couscous/coleslaw etc)
