Pasta with tomato and goats cheese

Ingredients for 8-10 people

Pasta Conchiglie            1Kg

Spinach                        3x250g bags

Soft mild goat’s cheese  4x150g “logs” (rindless)

Cherry vine tomatoes     75 fruit

Balsamic vinegar            4 tablespoons

Olive oil                         4 tablespoons

 

Method

  • Cook pasta as per package instructions (10 – 12 mins usually)
  • Wash and heat spinach in a pan until it wilts, without adding any additional water (5 mins) – serve on top of pasta.
  • Warm tomatoes in oil. When they start to split, add Balsamic vinegar, swish round, and serve on top of spinach.(5 mins)
  • Cut goat’s cheese into small pieces and serve on top of the whole thing.
  • Grated nutmeg and/or black pepper can be added.
